Synopsis

December 2002, the transnational McDonalds closed its operations in Bolivia by not having achieved a minimum of sales. Nobody spoke about the truth about closing down. It’s seems to be because it failed to confront a culture with indigenous features, the flavor of the Mestizo and the tradition of Bolivian cuisine.
We will look for popular recipes in Bolivia, its secrets, the ingredients and their origins. Such is the case of Salteña, a Bolivian empanada with Argentine origin: Discover how did this recipe transformed and adapted into the Bolivian palate? We will review the recipes with chili, sweet banana, the strength of potato and cassava and the nutritional richness of coca and corn. We will also explain the diversity of cooking methods according to the Bolivian geography. As well, the similarity from recipes within South America based on the case of Andean food (Bolivia - Peru) and the particular combination with tropic cuisine (Bolivia-Venezuela) In conclusion, we will show the contrast and penetration from the McDonald company in these countries, culminating with the reason why Bolivia gain gastronomy diversity due to the strong culture.
