Candy recipes are knots that, once untied, reveal the threads from which their places are woven. In Brazil, a country largely built on sugar, they teach a lot about our history of diversity and miscegenation, but also of violence and injustice.

Brazil cannot be properly understood without sugar. Sugarcane plantations and all that came with it - slavery, economic exploitation, violence - had a fundamental role in the construction of the country. In that context, candy and confection recipes can be an entrance door into the culture, ecology and sociology of Brazil. Exploring specific candies in 13 very different places of Brazil, “A Country Made on Sugar” strides a double path: it reconstitutes the natural and social roots of these recipes, while revealing Brazil’s cultural and natural diversity.
